Flavors of Bitter Melon: Bitter Melon in Three Styles with HK Nostalgic Snacks

Bitter Melon, with its bitter flavor, is categorized as a “cooling” type of food in Chinese medical culture, which is believed to relieve the ‘heat’ and ‘toxicity’ in human bodies and therefore itis also named “Cool Melon”. The more commonly grown bitter melon types in Hong Kong include oily bitter melon, Okinawa bitter melon, big top bitter melon and white bitter melon. Various types of them carry unique styles of bitter flavor and sweet after taste .

SEED has invited Chef Janet from Han’s Kitchen to demonstrate how to highlight the flavours of bitter melon with the help of local nostalgic snacks (dried salted plum and sweetened haw cake), producing a dish of three types of bitter melon. Everyone is able to learn more about local bitter melons during the Workshop, by tasting their textures and freshness which differ between types.
